Chef Dean’s biggest influence is Scotland’s natural pantry, with inspiration taken from the seasons and the sea, diners can enjoy incredible dishes such as ‘St Andrews Bay Smoked Lobster, Mirin and Dulse Butter’ or ‘Loch Etive Trout, Brown Crab, Galangal Curry’. Guests can opt for a five or six course tasting menu which celebrates local produce with an inventive and beautifully curated international twist.
