Head Chef - Charlie Hibbert

Charlie grew up amongst a family of hosts and entertainers. From early childhood, he learnt the importance of using food to make people happy, and the kitchen soon became his favourite place to be.

After leaving school, Charlie moved to London and worked in Soho learning to write code for a film production software company. Despite enjoying this, Soho restaurants and the world of food interested him much more. in 2010, Charlie embarked on an intense course at Ballymaloe in Ireland under the direction of the wonderful Darina Allen, who taught him the importance of ingredient driven cooking : "good food starts with good ingredients". He then ate his way through India, Vietnam, Malaysia and The Philippines before settling in New Zealand as a chef at Craggy Range - one of New Zealand's finest restaurants and wineries.

Returning to England, he headed back to Soho for the relaunch of Quo Vadis in 2012, where, under the auspices of the renowned Jeremy Lee, he honed his craft. Charlie now joins the family business full time as Head Chef of the Ox Barn.

DESCRIPTION

If you are looking for countryside dining at its chicest, your answer is Thyme. Nestled in the heart of the Cotswold village of Southrop, this quintessentially English country destination is an enclosed collection of restored 17th-century farm buildings, houses and cottages. Collectively, they form a peaceful hamlet environment and evoke a 'village within a village' spirit that epitomises the natural beauty of the surrounding area. It has a 31 bedroom Georgian rectory hotel, The BAA (bar), Ox Barn (a 56 seater destination restaurant), Cookery School, Meadow Spa with pure water swimming pool and hot spring tub, yoga and pilates, tennis, working farm, a range of country pursuits and local walk and cycle routes. In summary, dining at the Ox Barn at Thyme is a glamorous affair in a fully 21st-century context. Expect homegrown produce and British cuisine.
