etch. is a fine dining restaurant located in Hove, Brighton. It's the first restaurant from Steven Edwards, winner of the 6th edition of MasterChef; The Professionals in 2013, who was previously to be found at the five star South Lodge Hotel in Horsham.
A British 9/7/5-course tasting menus only restaurant, etch. focuses mainly on providing simply flavoured and locally sourced food. The philosophy is to celebrate local and British produce, using monthly changing tasting menus, which use two main ingredients per dish to showcase the fantastic produce. Unusually no spice is used (not even pepper) and flavour is increased by reducing and enhancing ingredients to get a purity of taste.
