Vatavaran

Vatavaran is a bold new chapter in pan-Indian fine dining, set just off the lively streets of Knightsbridge. From Michelin-starred chef Rohit Ghai and acclaimed restaurateur Abhishake Sangwan, this immersive experience draws inspiration from the elemental power of the Himalayas—its name, from Hindi, means “atmosphere.”

At its core is Sigri cooking—open-flame techniques that elevate seasonal ingredients and showcase India’s diverse regional flavours. Expect fire-led dishes like Lamb Chop with Kashmiri chilli, Lobster Moilee, and inventive vegetarian plates like Beetroot Chops with vanilla and cloves, or Morels & Broccoli in korma truffle.

Vatavaran is Chef Rohit Ghai’s most personal and ambitious project yet—rooted in tradition, refined in execution. Spread across four serene levels, its design reflects mountainous elegance with earthy textures and abstract calm.
