A masterpiece of heritage and new ambition
Change is stirring at Great Fosters. This month, the historic Surrey estate received a Michelin Red Key for exceptional hospitality — recognising it among the UK’s most distinctive stays — while its signature restaurant, The Tudor Pass, was named one of Tripadvisor’s Travellers’ Choice Best of the Best 2025, placing it within the top 1% of restaurants worldwide.
Both honours mark defining moments for the estate. At its heart is the incredible team led by General Manager Luke Jefferies, who joined Great Fosters less than two years ago. The addition of Executive Chef Stefano Di Giosia (pictured), — now leading The Tudor Pass into an inspired new culinary chapter — a master stroke.

With just seven tables, The Tudor Pass offers an intimate stage for Chef Stefano Di Giosia, who joined in July to lead the restaurant into a new chapter. Having honed his craft at The Fat Duck, where he helped develop the boundary-pushing creations that shaped modern British gastronomy, and at KOL in Marylebone — one of only two British restaurants named in the prestigious World’s 50 Best Restaurants – Stefano now brings that same quiet innovation to Great Fosters.

Relaxed dining with country house polish
For a lighter expression of the estate’s culinary craft, The Estate Grill serves confident, ingredient-led dishes in a handsome oak-panelled room dominated by a magnificent 17th-century fireplace. Highlights might include truffled polenta, whole roasted sole with brown shrimp and wild garlic, or Hampshire pork with gooseberry and cider jus — finishing, perhaps, with a bright lemon meringue. It’s relaxed, quietly elegant, and unmistakably Great Fosters.
