Dan began his career and fell in love with cooking at just 14 years old in the kitchen at the Cleveland Tontine, a locally renowned restaurant in his native North Yorkshire. Since then he's worked in Australia and New Zealand, and in Michelin star kitchens under Tom Kitchin at The Kitchin in Edinburgh, Tommy Banks at the Black Swan pub in Oldstead, Yorkshire, and Phil Howard at the Michelin-starred The Square in Mayfair, where he progressed to head chef. He then took on the same role at Fenchurch at Sky Garden.

In 2018 Dan took part in the BBC's Great British Menu TV series, winning his North East regional heat with a menu dedicated to pioneering nurse Florence Nightingale.


DESCRIPTION


Ex Soho House and Babington House director Ben Crofton and his wife team Vanessa, with Great British Menu finalist Dan Fletcher have opened the much anticipated Somerset restaurant, bakery and wine shop, 28 Market Place, at its namesake address. It is the husband and wife's team first solo venture. 


28 Market Place celebrates the very best of West Country and wider British produce with a modern European menu and house-made artisan bread, pastries and filled sourdough doughnuts, made fresh daily. The adjoining wine shop carries up to 100 wines not found on the main wine list, that can be enjoyed in the restaurant or to take away. 

In the restaurant, guests enjoy a menu of seasonally changing dishes from head chef Dan Fletcher. Example dishes for the January opening include Fallow deer, beetroot, red cabbage and preserved blackcurrants, Cornish red chicken, delica pumpkin & chanterelles on sourdough toast and Pollock with wood-fired leeks, St Austell bay mussels & sea vegetables, and decadent sharing roasts on Sundays. Vegetarian options will include Stuffed Harlequin squash, hen of the woods mushroom and confit egg yolk.
