Chef Director - Adam Byatt

Hailing from London, Adam started his career at the tender age of 16 as an apprentice chef at the prestigious, British hotel, Claridge's. After spending four and a half years between Claridge's and Bournemouth College, where he qualified as a chef, Adam moved to the five-star Berkeley Hotel. Captivated by the energetic scene and evolution of British food, Adam was eager to progress and in 1995 he joined The Square restaurant in Mayfair, rapidly working his way up to Sous Chef. During his time there, The Square was awarded its second Michelin star.

In 2001, Adam opened his first solo venture, Thyme in Clapham, followed by Trinity in Clapham Old Town and Bistro Union in Clapham's Abbeville Village.


DESCRIPTION


Charlie's is a unique dining experience in London's first hotel, Brown's, in the heart of Mayfair. 


The Forte family have been dedicated to hospitality for four generations. Charlie's is named after the founding Forte, Lord Charles, who loved traditional charm as well as modern touches in his hotels. In his honour, Charlie's marries much-loved convention with modernity, showcasing the evolution of British cuisine, with cosy booths, antique panelling and bright botanical wallpaper. 

Charlie's features menus developed by Michelin-starred chef, and Chef Director of Brown's, Adam Byatt, interiors by award-winning designer Olga Polizzi, combined with the renowned hospitality and charm of Brown's.
