Relaxation is the name of the game at Cambium. At Careys Manor in the heart of the New Forest, the restaurant pairs modern British cooking with an easy, comfortable dining room.

Its name comes from the living layer beneath a tree’s bark — an apt reference for a restaurant whose identity is closely tied to its New Forest surroundings. The kitchen draws on seasonal British produce and the rich natural larder of Hampshire and the surrounding area, with menus changing to make the most of what is available.

Cambium also has a particular interest in English wine, with an extensive collection celebrating the country’s increasingly accomplished vineyards alongside a broader international list.

The New Forest provides the inspiration for the dining room too. Hand-painted English trees decorate the walls, moss-toned upholstery brings in woodland colour and bespoke golden oak-leaf screens create more intimate spaces between tables. A recent refresh by Hampshire interior design studio JoJo Macnamara has introduced brighter colour and a lighter, more contemporary look while retaining Cambium’s connection to its surroundings
